Guthhi Bendakay Fry/Stuffed Bindi Fry...




Ingredients :

Bindi (ladysfinger) : 1/4 kg,

for stuffing : 2spoons of dry coconut powder,cumin seeds (jeera) :  1 spoon, red chilli powder  : 1.5 spoon,
garlic : 4-5 , besan (senaga pindi) : 2 spoons, 1 spoon of salt,1tsp of dhaniya (coriander seeds) powder. 1tsp of turmeric, garlic 5-6
and finely choppped  onions ,

oil 6-7 spoons, ghee 1.5 spoon (optional)  and coriander leaves(optional : to enhance the taste)

Procedure :

1) wash the ladysfinger thoroughly and keep them aside.

2)now prepare the stuffing material :
   shallow fry the cumin seeds and powder it .. to it , add the coconut powder, mashed garlic, 2-3 spoons of  besan, 1 spoon of red chilli powder,dhaniya powder, salt , turmeric and 1spoon of oil and 1 spoon of ghee.
now add finely chopped onions. and mix it well .. now this becomes the stuffing paste...

3) Leaving the edges make 3 vertical slits on the sides of ladys finger...Stuff the material from 3 sides(through the slits).


 4) Now pour about 4-5 spoons of oil and a spoon of ghee in a pan and after allowing it heat for a minute on a medium flame.. place the stuffed ladysfingers in it and close the lid. After every 5-8 minutes, turn the ladysfingers on sides and close the lid for it to cook thoroughly... and

5) After about 20-25 min, add coriander leaves and serve it with roti or rice.

note : ghee adds to the taste and so the coriander leaves..

spicy meal maker nuggets ...




Ingredients

meal maker 100g, onion paste 2 spoons, tomato paste 1 tsp, oil 5 spoons, ginger garlic paste 1 spoon,   red chilli powder 1 spoon, salt 1 spoon, powdered mixture of cloves,black pepper, and cinnamaon, cumin seeds  (1-2 tsp) ... coriander leaves




procedure :


1) soak the meal maker balls in hot water added with salt for about 10 min,  
2) meanwhile , pour 4-5 spoons of oil to the heated pan and add powdered spices 
3) and after a minute, add onion paste,fry it till the colour changes to light brown,
4) now add tomato paste and chilli powder
5) after frying it for 2-3 min, add ginger garlic paste and fry it again for 2-3 min
6) now drain the meal maker balls and add them to the cooking mixture
7) add half a glass of water and allow it cook for 5 min

8) now serve it with coriander leaves AND tomato ketchup ...

Bread ka Halwa




ingredients :

bread (1 packet) , ghee 5-6 spoons , sugar (1 cup ) , cashew nuts, almonds, cardamom(1tsp), milk (500 ml).



procedure


place the pan on stove and pour ghee and allow it heat

cut each slice of bread into 4 pieces and allow it dry 

now deep fry these slices and

fry the chopped cashewnuts , almonds in ghee and keep it aside

boil about 500 ml of milk an now add the fried bread slices and sugar and stirr it well till the consistency is little thick

 and  now add cardamom powder, fried cashewnuts and almonds and 1-2 spoon of ghee and mix it well and serve it...

Karam borugulu / maramaralu mixture...







also known as Spicy Puffed Rice



Ingredients : 

borugulu (1 kg) , groundnuts(2 cups = 100 g) , lentils (pappulu) 2cups = 100g , red chilli powder = 1 spoons , salt 1spoon, dry curry leaves , 1tsp of turmeric, 4 spoons of oil, jeera powder 1tsp




Procedure :


1) heat the pan and pour 4-5 spoons of oil,
2) now add dried ground nuts to it and lentils and fry it for 2 minutes on medium flame,
3) now add turmeric powder, red chilli powder, salt and jeera powder in quanity as mentioned 
4 ) add dried curry leaves,
5) and now add the puffed rice (borugulu) to it and mix it well and heat it for another 1-2 min.

                       Your spicy puffed rice is ready .

Oats Masala Porridge...









Ingredients : 

1 cup of oats  (200grams) , onions  (1) , green chillies (3-4) , carrots (1 small sized) , beans  (2 ) ,green peas  (2spoons) salt (1.5 tbsp) , pepper powder (1tsp),red chilli powder, (1 tbsp), masala powder (1 tbsp ) ,curry leaves, coriander, mint  leaves  (pudina).

procedure :

1) boil finely chopped carrot and beans upon adding salt ,

2) place a pan on medium flame and allow it heat,

3) now add 3-4 spoons of cooking oil , and jeera powder,
   fry the finely chopped onions ,
4) and after it turns pale, add finely chopped green chillies,

5) now add pinch of turmeric and and a 1 tsp of red chilli powder , masala powder and pepper powder to it,

6) add the boiled vegetables and 1 tsp of salt to it and allow it fry for 2-3 minutes,

7) now add 1 cup of oats to the mixture and fry it shallow on a medium flame,

(add 1 spoon of oil if required)

8) after the oats become little softer , add mint leaves and 1.5 cups of water and allow it cook ,

9) additional half to one cup of water can be added if you like it to be of thinner consistency ,

   
                        now add coriander and curry leaves and serve it hot...

Lemon Rice



Ingredients :



Cooked rice(1 cup), onions (1),  green chillies (5-6), lemon  (1), oil , turmeric powder (1/2 tsp) , salt (1 tbsp) , groundnuts (2 spoons) and for seasoning - mustard, black gram, jeera , bengal gram - each 1tsp, 2 dry red chillies.


procedure :

1) pour 4-5 spoons of oil in a pan and heat it and add the seasoning ingredients and groundnuts,
2) add finely chopped onions to it an fry it until it turns pale ,
3) add turmeric powder and the green chilli paste  and fry it for another 3-4 min on a medium flame,
4) now add lemon juice after diluting it with water  (1:1 ratio of lemon juice and water),
5) add curry leaves and cook in low flame for a minute,
6) now add 1 cup of rice and mix it well... 
and now garnish with coriander leaves and serve...

Rawa Upma ...






    

    


Ingredients :

             upma rawa (suji) - (2 cups) , onions (2 medium size), green chillies (5-6), tomato (2), ginger paste (1tbsp) , water (6 cups - thrice the amount of suji you take), curry leaves, and coriander leaves, and oil , 
Cashewnuts 10- 15 if you like , add it after seasoning.



Procedure : 

A )Keep the water to boil 


B)  

1) Place the pan on medium flame  and add 5-6 spoons of oil and  mustard, bengal gram , jeera , black gram and season it,
2) now add chopped onions and fry it shallow,
3) and after 2 min add finely chopped green chillies and fry it for another 2-3 min, 
4) now add ginger paste ( avoid if you dislike ),
5) after a minute add chopped tomatoes and fry it for another 2-3 min...,
6) add 2 cups of upma rawa and mix it and heat it for another 2-3 min,
7) now add the boiling water as u stirr it...
8) add curry leaves and coriander leaves,
9) now allow it thicken and allow the mixture to condense  (on a low flame).

       After about 10 min,hot and tasty rawa upma is ready to be served.
